Ingredients
- 2 lbs. yukon gold potatoes washed, cut into 2″ chunks
- 8 tablespoons butter divided
- 3/4 cup whole milk or heavy cream
- 1 onion diced
- 1.5-2 lbs lean ground beef or turkey
- 3 cups frozen mixed vegetables peas, carrots, corn, and/or green beans
- kosher salt and black pepper to taste
