Pork Chops with Scalloped Potatoes
Instructions:
Step 1: Prepare the Scalloped Potatoes
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the heavy cream, minced garlic, salt, pepper, and paprika. Mix well.
- In a greased 9×13-inch baking dish, layer half of the sliced potatoes and half of the sliced onions. Pour half of the cream mixture over the potatoes. Sprinkle with half of the cheese.
- Repeat the layers with the remaining potatoes, onions, cream mixture, and cheese, finishing with a layer of cheese on top.
Step 2: Bake the Potatoes
- Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
- After 30 minutes, remove the foil and bake for an additional 20-25 minutes, or until the potatoes are tender and the top is golden brown and bubbly.
Step 3: Prepare the Pork Chops
- While the potatoes are baking, season the pork chops with salt, pepper, garlic powder, paprika, and thyme (if using).
- Heat olive oil in a large skillet over medium-high heat. Once hot, add the pork chops and sear for about 4-5 minutes on each side, or until they are nicely browned and cooked through (internal temperature should reach 145°F or 63°C). Remove from the skillet and let them rest for a few minutes.
Step 4: Serve
- Once the scalloped potatoes are done baking, remove them from the oven and let them sit for a few minutes before serving.
- Plate the pork chops alongside a generous serving of scalloped potatoes. Garnish with fresh parsley for a pop of color.
