Directions
Preheat your oven to 400°F (200°C). Lightly grease a baking dish.
In a shallow bowl, mix together the Parmesan cheese, breadcrumbs, garlic powder, Italian seasoning, salt, and pepper.
Spread a little Dijon mustard over each pork chop, then dip them into the Parmesan mixture, pressing to ensure an even coating.
Heat the olive oil in a skillet over medium-high heat. Add the pork chops and sear them for 2–3 minutes on each side until golden brown.
Transfer the pork chops to the prepared baking dish and bake in the preheated oven for 15–20 minutes, or until the pork is cooked through and the crust is golden and crispy.
Let the pork chops rest for a few minutes before serving.
Variations & Tips
For a gluten-free version, use almond flour or gluten-free breadcrumbs in place of regular breadcrumbs. If you have picky eaters, try using a mild cheese blend instead of Parmesan. To add a bit more spice, a dash of cayenne or paprika in the breadcrumb mix can give it a nice kick. These chops are also delicious paired with a tangy barbecue sauce drizzle if your family enjoys a bit of Sweet & Smoky flavor.
