Ingredients

For the Chicken and Broth:

  • 1 whole chicken (3–4 lbs), cut into pieces
  • 8 cups chicken broth
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 teaspoons dried thyme
  • 1 bay leaf
  • Salt and black pepper, to taste

For the Feather Dumplings:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 2 tablespoons cold butter, cubed
  • 3/4 cup whole milk (or buttermilk for extra fluffiness)
