2 racks of lamb (about 1.5 lbs each), frenched
3 tbsp olive oil
4 cloves garlic, minced
2 tbsp fresh rosemary, chopped
1 tbsp fresh thyme, chopped
1 tsp Dijon mustard
Salt and pepper, to taste
