Honey Peach Cream Cheese Cupcakes

Ingredients

For the Cupcakes:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk (or regular milk with 1/2 teaspoon vinegar or lemon juice)
  • 1/2 cup diced peaches (fresh, frozen, or canned, drained well)

For the Filling:

  • 4 oz cream cheese, softened
  • 2 tablespoons honey
  • 1/2 cup finely chopped peaches

For the Cream Cheese Frosting:

  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1–2 tablespoons honey, to taste

Optional Garnish:

  • Thin peach slices
  • Honey drizzle
