Slow Cooker Chicken Pot Pie Soup

 

Ingredients

Soup Base:
1 medium onion, diced
2 carrots, peeled and diced
2 celery stalks, diced
3 cloves garlic, minced
1 pound boneless, skinless chicken breasts or thighs
1 cup frozen peas
4 cups chicken broth
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 bay leaf
1/2 teaspoon salt, or to taste
1/2 teaspoon black pepper, or to taste
Creamy Finish:
1 cup heavy cream
1/4 cup all-purpose flour
2 tablespoons butter (optional, for added richness)
Optional Pie Crust Topping:
1 sheet refrigerated or frozen pie crust, cut into strips or shapes
